- tbsp rice flour,
- tbsp semolina (Sooji),
- tbsp plain yogurt,
- tbsp minced onion, minced green chili pinch, 1/
- tsp cumin seeds, salt pinch, water to taste,
- tsp oil (or Ghee).
- Put dark cocoa-colored 'Ragi flour', 'rice flour' and 'semolina' for crispiness in bowl.
- Add onions, green chilies, cumin seeds, salt there, pouring little yogurt (instead of fermented acidity) and massive water.
- Mix firmly without lumps with whisk until becoming 'water-like state batter' much splashier than pancake batter (*No need to ferment like regular Dosa, bakable immediately).
- Heat pan (or griddle) high until smoking, smear oil ultra-thinly with kitchen paper.
- Scoop splashy batter with ladle, pouring boldly 'splash' from pan edge towards center (becomes lace-like crepe with countless mesh holes).
- Drop to medium heat, bake slowly until batter edges crisp and surface dries (okay without flipping).
- Finally drip
- tsp oil on edges; when bottom turns crispy brown, fold in half 'pat'. Ultimate diet crepe nurturing bones/muscles fusing savoriness of Ragi flour—said to have 30x+ calcium of rice—and cumin's refreshing aroma.
