- tbsp grated coconut (fresh or dry),
- green chili,
- tbsp minced onion (or shallot), 1/
- tsp mustard seeds,
- tsp Urad Dal, 1/
- tsp turmeric,
- curry leaves,
- tsp coconut oil, salt pinch.
- Remove cabbage core, mince as finely as possible (or ultra-thin julienne).
- Put grated coconut, minced green chili, turmeric in bowl, lightly rubbing by hand making 'yellow coconut Masala'.
- Heat coconut oil in pan, pop mustard seeds. Then fry Urad Dal (split black gram) until light brown, embedding crispy texture into oil.
- Add minced onions/curry leaves frying briefly, toss mountain of cabbage instantly.
- Sprinkle salt, mix with spatula on medium without burning so it fries solely with moisture from cabbage (*Absolutely don't add water).
- When cabbage wilts slightly, place pre-made 'yellow coconut Masala' covering from above, reduce to low and cover pan.
- Put coconut in 'steam-bake' state for mins with cabbage moisture.
- Open lid, mix overall crisply evaporating moisture to finish. Coconut's natural sweetness and cabbage crispiness give surprising satisfaction—ultimate low-carb/high-fiber side dish.
