- bunch spinach (~200g), 1/
- minced onion,
- minced tomato,
- tbsp garlic-ginger paste,
- tsp cumin seeds, 1/
- tsp turmeric,
- tsp coriander powder, salt pinch, 400ml water,
- tsp oil (or Ghee),
- tsp lemon juice.
- Wash yellow lentils (Masoor Dal) well, add turmeric/salt/water boiling soft gooey in pot.
- Wash spinach well, finely chop.
- Heat
- tsp oil (or Ghee) reduced to limit in pan, pop cumin seeds drawing out aroma.
- Add garlic-ginger paste and minced onions, frying fragrantly until golden.
- Add tomatoes and coriander powder; when tomatoes crumble into paste, toss mountain of chopped spinach.
- When spinach wilts reducing volume, pour pre-boiled gooey lentils with juice.
- Mix gently so overall becomes emerald-green/golden marble pattern, simmer on low ~
- mins.
