  5. garlic cloves,
  6. tsp black peppercorns,
  7. tsp cumin seeds, 1/
  8. tsp turmeric, 1/
  9. tsp mustard seeds,
  10. curry leaves,
  11. dried red chili, salt pinch, 400ml water,
  12. tsp oil, massive cilantro.
  13. Most crucial spice blending. Put whole 'black peppercorns', 'cumin seeds', raw 'garlic' in mortar (or spice mill), smash/crush into coarse paste (*Grinding from raw rather than powder draws intense aroma/medicinal efficacy).
  14. Put cubed ripe tomatoes, sour water dissolving tamarind, turmeric, salt, water in pot and heat.
  15. Simmer mins until tomatoes crumble gooey, toss entire 'special black pepper/garlic paste' crushed in mortar earlier, boil bubbling further mins giving punch to soup.
  16. Make 'Tadka (Tempering)' in small pan. Heat minimal oil, pop mustard seeds, fry red chilies/curry leaves almost burning transferring aroma.
