  4. tbsp grated coconut (fresh or dry), 1/
  5. minced onion,
  6. green chili, 1/
  7. tsp mustard seeds,
  8. tsp Urad Dal, 1/
  9. tsp turmeric,
  10. curry leaves,
  11. tsp coconut oil, salt pinch.
  12. Halve bitter gourd vertically removing seeds/pith, slice into ultra-thin half-moons. Rub little salt leaving ~
  13. mins, squeeze strongly by hand discarding bitter moisture.
  14. Put grated coconut, minced green chilies, turmeric in bowl, rubbing lightly by hand making 'yellow coconut Masala'.
  15. Heat coconut oil in pan, pop mustard seeds. Then fry Urad Dal (split black gram) until light brown, embedding crispy texture into oil.
  16. Add minced onions/curry leaves frying briefly, toss moisture-squeezed bitter gourd instantly.
  17. Fry on medium until oil coats bitter gourd, place pre-made 'yellow coconut Masala' covering from above, reduce to low covering pan (*Don't add water).
  18. Put in 'steam-bake' state for mins with bitter gourd's remaining moisture.
  19. Open lid, mix overall crisply evaporating moisture completely to finish. Bitter gourd's vivid 'bitterness' brilliantly neutralized by coconut's gentle 'sweetness' and spice 'savoriness'—South Indian magic side dish making white rice (or brown rice) unstoppable.
