- tsp Ghee (or oil), salt, cilantro.
- First, wash small amounts of rice/Moong Dal (green gram), soak ~
- mins.
- Heat minimal
- tsp Ghee (or oil) in pot, pop cumin seeds drawing out aroma.
- Drain soaked rice/beans putting in pot, add turmeric/salt stir-frying briefly.
- Here enters the star. Dump popcorn-like white round 'Makhana (fox nuts)' into pot. Makhana itself is a tasteless/odorless sponge-like ingredient.
- Pour 500ml water; upon boiling cover, simmer slowly on low ~
- mins (or few mins in pressure cooker).
- When Makhana—having absorbed moisture to limit—melts gooey, completely integrating with rice/beans becoming 'gooey porridge (Khichdi)', remove from heat.
