  5. tbsp fresh Methi leaves (fenugreek, or sub dried Kasuri Methi),
  6. tbsp unsweetened yogurt, minced green chili pinch, 1/
  7. tsp each turmeric/chili powder, 1/
  8. tsp each ajwain/cumin, salt pinch, water to taste,
  9. tsp oil (for baking).
  10. Put dietary-fiber-rich whole wheat flour (Atta) and protein-supplementing chickpea flour (Besan) in bowl.
  11. Toss blood-sugar-control god-herb 'fresh Methi leaves (chopped finely)', green chilies, turmeric, chili powder, ajwain, cumin, salt there.
  12. Add small amount unsweetened yogurt to prevent dough dryness, gradually adding water kneading into earlobe-hard smooth dough (*Green leaves beautifully scatter across dough).
  13. Roll dough ping-pong-ball-sized, dust flour rolling into 1-2mm ultra-thin circles with rolling pin.
  14. Place dough on heated pan (Tawa), bake both sides on medium.
  15. When small brown spots appear on surface, briefly brush minimal oil (or Ghee) reduced to limit for diet on surface, baking both sides fragrantly.
  16. Plate piping hot Thepla, serve alongside unsweetened yogurt/pickles to finish. Biting pops Methi's bittersweet herb aroma and spices; highly nutritious magic flatbread infinitely eatable alone without curry.
