- tbsp oil, salt, 150ml water, cilantro.
- Don't wash mushrooms; wipe dirt and slice thickly (or halve).
- Heat oil in pan, pop cumin seeds, fry minced onions thoroughly until 'deep brown (almost burning)'. This becomes absolute foundation of rich depth.
- Add garlic-ginger paste, tomato puree, all spices (coriander, turmeric, chili powder, salt), frying until oil separates becoming gooey Masala paste.
- Toss sliced mushrooms here, frying on medium entwining spices. Since mushrooms release moisture, pour little water (~150ml).
