  5. If making with authentic fermentation, mix water-pasted Urad Dal and cocoa-colored 'Ragi flour' in bowl, add little salt/water to pancake-batter hardness. Leave overnight in warm place, fermenting bubbling via natural power (*Batter doubles, yielding yogurt-like acidity).
