  3. cabbage (~400g), 50g frozen green peas (Matar), 1/
  4. sliced onion,
  5. green chili,
  6. tsp oil (or Ghee),
  7. tsp cumin seeds, 1/
  8. tsp turmeric,
  9. tsp coriander powder, salt pinch, lemon juice.
  10. Remove cabbage core, julienne as finely/fluffily as possible.
  11. Heat oil (
  12. tsp) reduced to limit for diet in pan, pop cumin seeds drawing out savory earthy aroma.
  13. Add sliced onions/green chilies, fry briefly on medium until onions are translucent.
  14. Right after adding turmeric/coriander powder, instantly dump mountain of julienned cabbage and vividly colored green peas (Matar).
  15. Sprinkle salt, loosely mix scooping from pan bottom with spatula so it fries solely with cabbage moisture (*Absolutely do not add water).
  16. When turmeric's yellow color coats overall, reduce to low, cover pan, 'steam-frying' just 3-
  17. mins with cabbage's own moisture.
  18. Open lid, when cabbage wilts reducing volume to <half and faint sweet smell rises, remove from heat.
  19. Finally squeeze little lemon juice tightening flavor. Intense cumin aroma completely erases cabbage grassiness; ultimate dietary-fiber side dish infinitely eatable with crisp texture.

Trivia

[Hardcore] 'Sabzi' is North Indian veg steam-fry. Using almost no oil, cooking through via veg's own moisture (waterless cooking) prevents escape of water-soluble nutrients like vitamin C, condensing cabbage sweetness to limit. When 'wanting curry at all costs but not carbs (rice/Naan)' during diets, using this massive cabbage stir-fry as rice substitute (bulking) to pour curry over is Indian fitness demographics' common practice.

Eating tips & etiquette

[Unique Eating] Instead of white rice, heap this cabbage stir-fry in bowl as 'staple food', pouring spicy chicken curry massively over top to eat as 'Curry Cabbage'!

Allergen

Soy (Lentils)
