Recipe

Ingredients

  • Flour
  • Minced pork
  • Pork skin(for aspic)
  • Ginger
  • Scallion
  • Sesame oil

Instructions

  1. [Authentic Recipe]
  2. Mix all-purpose flour with warm water, knead into a smooth dough, cover with a damp cloth and let rest.
  3. Knead minced pork with ginger juice, scallions, soy sauce, sesame oil, and white pepper until sticky. The biggest secret: finely crush 'pork aspic' (boiled and chilled pork skin gelatin) and mix generously into the filling.
  4. Divide dough into small pieces, roll into circles with thick centers and translucent edges.
  5. Place filling in the center, pleat beautifully (ideally 18-
  6. pleats), and seal the top tightly.
  7. Line a bamboo steamer with cloth or cabbage leaves, arrange dumplings with space between them, and steam over high heat for 5-
  8. minutes.

Trivia

[Trend] Ignited globally by the famous Taiwanese restaurant Din Tai Fung. The thinness of the wrapper and beauty of the pleats show the artisan's skill; 5g wrapper to 16g filling is the golden ratio.
