- Pork belly
- Soy sauce

- Soak salted, fermented Taiwanese dried 'Sun Si' (similar to the prototype of menma) repeatedly in water to desalt and remove overly strong acidity.
- Squeeze out water and cut Sun Si into suitable lengths.
- Ladle out the 'umami-rich lard (pork fat)' floating on the surface of a regular pork belly Lu Rou Fan pot, and transfer to another pot.
- Slowly sauté the Sun Si in that pork fat, add a little soy sauce, sugar, and broth, and simmer until tender.
- Pour Lu Rou over rice, and serve a generous side of this simmered Sun Si right next to it.
