- Take sweet and savory canned pickled cucumbers sold in Taiwanese supermarkets (Cui Gua: black, wrinkled pickles) and chop finely. Keep the pickling liquid.
- Knead minced pork with chopped pickles, grated garlic, soy sauce, white pepper, and about
- tbsp of the pickling liquid until sticky.
- (Simmered version) Sauté in a pan, add a little water, simmer for
- mins until liquid reduces. (Steamed version) Spread flat in a bowl, steam for
- mins to draw out meat juice soup.
- Pour the finished Gua Zi Rou, broth and all, generously over white rice.
