- Flatten chicken breast, marinate simply with salt, pepper, and very light soy sauce (keep salt low as a sweet sauce goes on later).
- Coat with batter or sweet potato flour and fry firmly until the surface is hard (so the crust won't fall apart when glazed).
- In a small pot, heat honey, thick soy sauce, maltose, a little garlic powder, and water into a thick, syrupy 'Mi Zhi sauce'.
- Generously brush this hot honey sauce on both sides of the freshly fried chicken until it shines brilliantly. Finish with white sesame seeds.
