Instructions

- Cut beef shank into large blocks, blanch in boiling water to remove scum and blood, and rinse.
- Heat beef tallow and oil, sauté scallion, ginger, and garlic. Add doubanjiang and tianmianjiang, sautéing slowly until oil turns red and rich.
- Return beef to pot, add soy sauce, rock sugar, and rice wine to color the meat.
- Pour plenty of water (or beef bone broth), drop in a spice pouch (star anise, Sichuan pepper, cassia, tangerine peel) and a whole tomato.
- Simmer on low for 2-
- hours until tender.
- Serve chewy thick noodles in a bowl, top with hot beef, rich broth, blanched greens, scallions, and pickled mustard greens (suancai).
