Instructions

  3. Place bones, beef, massive ginger slices, green scallion parts, and whole onions in a giant stockpot.
  4. Add a cloth pouch containing mild medicinal spices like dong quai, licorice, tsaoko, and white pepper.
  5. Simmer on very low heat without boiling for at least 4-
  6. hours, skimming scum, to extract a clear golden 'Qingtang' broth.
  7. Remove and slice the meat. Season the broth only with salt and a little rice wine, and serve over thin straight noodles.
