  3. Thoroughly parboil tripe to remove odor, use a pressure cooker to gelatinize tendon over time, and simmer shank slowly in special soy-based Hongshao broth.
  4. Finally, combine all ingredients in one Hongshao broth pot to harmonize flavors.
  5. Serve noodles in a large bowl, arrange the three ingredients beautifully so each stands out, and pour the piping hot rich broth. Garnish generously with scallions and suancai.
