- Besides beef shank blocks, using thinly sliced beef (shabu-shabu style) is also a popular style.
- Heat oil in a pot, sauté scallions and ginger, then add several tablespoons of the star ingredient 'Shacha Sauce', sautéing fragrantly (the trick is to transfer the seafood umami and aroma to the oil here).
- Add soy sauce, a little sugar, and pour beef bone broth (or water).
- Add blanched beef (or raw thin slices) and simmer until cooked. The Shacha oil and seafood broth dissolve, creating a complex, spicy, sweet BBQ-like soup entirely different from Hongshao.
- Serve over noodles, garnished with water spinach.
