Instructions

  2. Heat plenty of oil in a wok, sauté chopped onions, garlic, and ginger until sweet.
  3. Add several tablespoons of 'Taiwanese curry powder' (heavy in turmeric, milder than Japanese curry powder), mixing with oil without burning to explode the aroma.
  4. Add bite-sized beef shank (or belly) to sear and coat the surface.
  5. Pour water (or light chicken broth), use very little soy sauce, and season with salt and sugar. Do not add star anise or doubanjiang.
  6. Simmer on low until meat is tender, and pour the yellow, watery curry soup and meat generously over boiled thick noodles.
