  3. Make the special tossing sauce (Ban Mian Jiang) for dry noodles. Take some beef braising liquid into a small pot, boil down slightly to thicken. Adjust with strong flavors by adding sesame oil, black vinegar, grated garlic, and a little sugar.
  4. Boil thick flat noodles (like knife-cut noodles that hold sauce well), drain, and plate.
  5. Drizzle the special sauce over the hot noodles, and top with braised beef, chopped scallions, crushed peanuts, and cilantro.
  6. Right before eating, toss vigorously from the bottom of the bowl until noodles and sauce are completely integrated.
