Instructions

  2. Thoroughly wash pork intestines with salt and vinegar, braise in soy sauce, star anise, and wine for over
  3. hour, and cut into bite-sized pieces.
  4. Rinse Taiwan's unique 'red mianxian' (steamed and dried brown somen) to remove salt.
  5. Boil bonito broth, add noodles, and simmer. Season with soy sauce, fried shallots, and rock sugar.
  6. Dissolve potato starch in water and add to the soup to thicken it strongly.
  7. Lightly coat small oysters in sweet potato flour, parboil briefly to make them plump.
  8. Serve noodles in a bowl, top with the intestines, oysters, grated garlic, black vinegar (Wu Cu), and plenty of cilantro.
