  2. Prepare regular Hujiao Bing dough (pie-like layered You Su Pi).
  3. The biggest difference: regular Hujiao Bing uses lots of fat for juiciness, but Chirou Hujiao Bing uses only 'lean parts' like pork ham, roughly chopped.
  4. Thoroughly knead the lean meat with plenty of black pepper, soy sauce, five-spice, and sesame oil (slightly more to supplement the lack of fat).
  5. Wrap the lean meat filling and green scallions in dough, coat with white sesame, and bake in the oven. Due to low fat, the baked meat tightens, giving a meaty, steak-like texture.
