Recipe
Ingredients
- Unsweetened soy milk
- Rou Song(Pork floss)
- Egg
- Youtiao
- Black vinegar
- Dried shrimp
Instructions
- [Authentic Recipe]
- Beat a raw egg at the bottom of a bowl, add black vinegar, soy sauce, sesame oil, dried shrimp, and zha cai.
- Vigorously pour piping hot unsweetened soy milk to create egg drop and curdled soy milk simultaneously.
- The toppings make it 'Zonghe' (Mixed). Top with double the usual amount of crispy youtiao.
- Heap the main star 'Rou Song' (fluffy pork floss made by boiling pork in sweet soy sauce and drying into fibers) until the surface is hidden.
- Scatter scallions and chili oil. The sweet pork floss dissolves into the tart soup, creating a complex 'sweet and salty' swamp.

Trivia
[Hardcore] 'Zonghe' means mixed/all toppings. Rou Song is a national ingredient essential for Taiwanese sandwiches and rice balls. Its sweetness brilliantly rounds out Xian Doujiang's acidity.
