- Sweet potato flour
- Five-spice powder

Instructions

- Prepare a 'mountain' of fresh Jiucengta (Taiwanese basil: purple stems, strong scent) equal in volume to the chicken. Wash and dry completely (to prevent oil splatter).
- Marinate chicken in five-spice, fry crispy in sweet potato flour.
- Right before the chicken is done, dump the mountain of basil into the oil. Amidst violent splattering, flash-fry for 10-
- seconds until leaves are translucent and crispy, then remove with the meat.
- Transfer to a bowl, sprinkle salt and pepper (Jiao Yan Fen), and toss.
- The paper bag is filled with crispy basil equal to or greater in volume than the chicken.
