  • Minced pork
  • Garlic
  • White pepper

Instructions

  2. Boil salted duck eggs (Xian Dan), extract yolks, and mash finely with a fork. Dice firm tofu and blanch briefly.
  3. Heat plenty of oil (or butter) and a little minced garlic in a wok, add mashed yolks.
  4. Sauté slowly on low until the yolks emulsify with the oil, bubbling up into a fine 'golden foam (Jin Sha)' like crab bubbles.
  5. Add minced pork (optional) and blanched tofu, simmer with a little water, sugar, and white pepper (no soy sauce needed due to the salted egg's strong saltiness).
  6. Once the golden sauce sticks heavily to the tofu, scatter scallions to finish.
