  • Peeled shrimp
  • Squid
  • Scallops
  • Doubanjiang
  • Chicken broth

Instructions

  2. Dice and blanch firm tofu (or egg tofu). Cut peeled shrimp, squid, and scallops into bite-sized pieces, massage with wine and salt, and blanch briefly to retain plumpness.
  3. Heat oil in a wok, sauté garlic, ginger, and doubanjiang for aroma.
  4. Add chicken broth (or seafood broth), soy sauce, and a little sugar. Bring to a boil, add tofu, and simmer on low.
  5. Once tofu absorbs the flavor, toss in the prepped seafood all at once. The biggest trick is adding seafood last and heating briefly, as overcooking toughens it.
  6. Thicken with potato starch slurry and drizzle with sesame oil to finish.
