  • Hard firm tofu
  • Minced pork
  • Doubanjiang
  • Soy sauce
  • Garlic
  • Scallions

Instructions

  2. Use hard firm tofu that won't crumble, dice to
  3. 5cm, and blanch.
  4. Stir-fry minced pork, garlic, ginger, and plenty of doubanjiang and soy sauce on high heat in a wok until crispy. Make the seasoning very strong (salty) for the Taiwanese tavern style.
  5. Add tofu and a little water, simmer briefly, and thicken 'very firmly' with potato starch slurry (so the liquid doesn't evaporate completely on the hot plate).
  6. Heat a beef steak iron plate on a gas stove until smoking hot.
  7. Vigorously pour the Mapo Tofu from the wok onto the hot plate. It erupts with an explosive sizzle and the savory smell of scorched soy sauce as it's carried to the table.
