  2. Mix all-purpose flour, water, salt, and 'baking powder & baking soda' (traditionally alum) to maximize expansion. Make a smooth dough and rest overnight in the fridge.
  3. Next morning, roll dough into a long rectangle (1cm thick, 10cm wide) and cut into 2-3cm wide strips.
  4. Stack two strips and press strongly down the center with a chopstick to stick them together.
  5. Hold the ends and gently stretch the dough to double its length.
  6. Drop gently into 200°C hot oil, rolling constantly with chopsticks. It expands explosively; drain when golden and crispy.
