- Mix all-purpose flour with boiling and cold water, knead into a chewy 'Tangmian' dough and rest.
- To minced pork (balanced lean/fat), add massive chopped scallions, ginger juice, soy sauce, sesame oil, white pepper, and a little five-spice.
- The biggest point: like Xiaolongbao, crush 'pork aspic (Pi Dong)' and knead massively into the filling (this melts during baking to become explosive meat juice).
- Roll dough thin, wrap filling generously, and seal top like a meat bun.
- Place sealed-side down on an oiled griddle (or pan), gently press from above with hand or spatula to flatten into a disc like 'Oyaki'.
- Cover to steam-fry inside, and fry until both sides are crispy golden brown.
