- Prepare pre-boiled thick yellow Chinese noodles coated in oil (You Mian) used in Taiwanese breakfast shops (Zao Can Dian).
- Oil the giant griddle of the breakfast shop, briefly sauté bacon (or shredded pork) and sliced onions.
- In the space next to it, crack an egg to start a fried egg.
- Dump the noodles over the ingredients on the griddle, splash a little water to loosen.
- Pour plenty of the decisive 'Hei Hu Jiao Jiang' (Black pepper sauce: spicy steak sauce boiled down from black pepper, soy sauce, butter, onions). (*Non-spicy 'Mogu Jiang' [Mushroom tomato sauce] is the other popular giant).
- Use spatulas to violently mix and fry the sauce and noodles, plate it, and slam the sunny-side-up egg on top.
