Unlike Cantonese porridge that boils rice to mush, this Taiwanese-style soup rice (Zosui) leaves the rice grains intact in a broth packed with pork, bamboo shoots, and dried shrimp.

  2. Prepare raw rice (or cooked rice).
  3. Heat oil in a pan, sauté minced shallots, dried shrimp (Xiami), shredded pork, dried shiitake, and julienned bamboo shoots fragrantly.
  4. Once cooked, season firmly with soy sauce and white pepper.
  5. Pour plenty of pork bone broth (or water) and bring to a boil.
  6. Toss in the rice. Let the rice absorb the umami, but turn off the heat before it becomes a mushy paste (best when grains remain independent in the soup, like Zosui).
  7. Plate, and scatter minced celery, fried shallots (You Cong Su), and white pepper to finish.
