- [Ma Jiang Sauce] The decisive factor. Blend white sesame paste (Zhi Ma Jiang) and unsweetened peanut butter. Gradually whisk in soy sauce, black vinegar, sugar, and a little cold water until smooth and velvety.
- Plate the noodles, top with shredded cucumber (and blanched bean sprouts).
- Pour the rich sesame-peanut sauce generously, and add
- tbsp 'grated raw garlic'. Add chili oil to taste.
