- Soak dried Taiwanese rice noodles (Hsinchu is famous) in warm water for
- mins to rehydrate, cut to edible lengths with scissors.
- Heat lard (or oil) in a pan, sauté shredded pork, rehydrated chopped dried shrimp and shiitake, and shallots until fragrant.
- Add julienned cabbage and carrots, sauté briefly.
- Add shiitake soaking liquid, soy sauce, white pepper, a little sugar, and pork bone broth, bringing to a boil.
- Toss the rehydrated rice noodles into the pan, mixing with chopsticks and spatula by lifting, letting the noodles absorb all the broth in the pan.
- Done when moisture evaporates and noodles are fluffy.
