- Drain canned tuna, mix thoroughly with plenty of 'Taiwanese mayonnaise (sweet)', black pepper, minced onions, and corn to make a tuna mayo paste.
- Heat oil in a pan (or griddle), pour beaten egg scattered with scallions.
- While the egg is runny, cover with chewy Danbing wrapper (flour and sweet potato flour dough) and press to bond.
- Flip the whole thing so the egg side is up, place the tuna mayo generously in the center.
- (Add cheese or basil here if desired). Use a spatula to roll the dough tightly into a tube so the tuna doesn't spill.
- Cut into bite-sized pieces, eat dipped in sweet/savory thick soy sauce (Jiangyou Gao).
