Instructions

  2. Prepare the main star 'Yimian' (flat noodles kneaded with duck egg and deep-fried crispy like instant ramen).
  3. Boil a slightly sweet, clear broth made from bonito, kelp, and pork bones in a single-serving small aluminum or clay pot.
  4. Add shrimp, clams, sliced pork, fish balls/kamaboko, and cabbage to the pot and cook.
  5. Once ingredients are cooked, toss the dry fried Yimian directly into the pot.
  6. Drop a raw egg over the noodles, and remove from heat at the precise moment the noodles soften by absorbing broth and the egg is soft-boiled.
  7. Serve with a little Shacha sauce (Taiwanese BBQ sauce) on the side.
