  4. Add julienned cabbage, carrots, and wood ear mushrooms, sautéing briefly.
  5. Pour soy sauce, white pepper, a little sugar, and a ladle of 'pork (or chicken) bone broth'. Unlike Japanese Yakisoba, adding broth is the key feature.
  6. Toss in You Mian, stir-frying/braising on medium heat so the noodles completely absorb the umami-rich broth.
  7. When moisture evaporates and noodles are moist, add chives and sesame oil, tossing briefly to finish.
