  • Minced pork
  • Five-spice Dougan(firm tofu)
  • Tianmianjiang
  • Doubanjiang
  • Cucumber

Instructions

  2. [Zha Jiang] Heat oil in a wok, stir-fry minced pork (slightly fatty is good) until crumbly, add minced garlic and scallions for aroma.
  3. Dice Taiwan's unique brown pressed tofu 'Five-spice Dougan' into 5mm cubes, add to wok and stir-fry with meat (this is the biggest Taiwanese feature).
  4. Add Tianmianjiang (sweet bean sauce), a little doubanjiang, soy sauce, sugar, and wine. Add a splash of water, simmer on low for
  5. mins to make a concentrated, rich meat sauce.
  6. Boil medium-thick flat noodles (or preferred), drain, and plate.
  7. Generously pour the hot Zha Jiang over the noodles, garnish with shredded cucumber (or boiled bean sprouts, edamame). Mix vigorously right before eating.
