  2. Soak long-grain glutinous rice for hours. Rehydrate and chop dried shiitake and shrimp.
  3. Heat oil and sesame oil, sauté shallots, dried shrimp, shiitake, and coarse minced pork.
  4. Season strongly with soy sauce, sugar, five-spice, white pepper, and rice wine to make the filling (Rou Zao).
  5. Place the filling at the bottom of a small metal tube (or ramekin), adding half a braised quail egg.
  6. Fill up to 80% with raw glutinous rice lightly seasoned with the sautéing oil and soy sauce.
