- Soak long-grain glutinous rice, drain, and steam in a wooden steamer until fluffy (ensure no hard core).
- [Fillings] Prepare shredded pork, rehydrated julienned dried shiitake, dried squid, dried shrimp, and shallots.
- Heat lard and black sesame oil in a giant wok, sautéing these ingredients sequentially until highly fragrant.
- Season strongly with soy sauce, sugar, rice wine, and white pepper. Add a little soaking liquid from shiitake and squid to make a rich umami sauce.
- Vigorously toss the hot steamed sticky rice into this wok.
- On low heat, use two spatulas to cut and fold the rice, coating every single grain evenly with the sauce and fillings. Scatter cilantro.
