- Do not use a thick batter; just lightly dust the surface with a little sweet potato flour (Taiwanese style is close to bare-frying).
- Fry slowly at 160°C to cook through, finishing at 180°C to make the skin ultra-crispy and golden.
- Serve rice on a flat plate (or bento box), drizzle a little Lu Rou sauce on the rice, arrange stir-fried cabbage, braised dried tofu, and a braised egg, and slam the giant fried chicken leg on top.
