  • Peeled shrimp
  • Egg
  • Green scallions
  • Salt
  • White pepper

Instructions

  1. [Authentic Recipe]
  2. Remove veins from fresh peeled shrimp, massage with salt, egg white, and potato starch to coat (Chinese basic technique 'Shangjiang' to seal moisture and keep them plump).
  3. Heat plenty of oil in a wok, velvet (oil-blanch) the shrimp briefly, and remove immediately when red (do not overcook).
  4. Leave a little oil, add beaten egg, and stir-fry on high.
  5. While the egg is runny, add warm white rice (low moisture), beating with the back of the ladle to coat every grain with egg.
  6. Season with salt and a little white pepper (no soy sauce to keep color clear and shrimp aroma pure).
  7. Finally, add the velveted shrimp and plenty of chopped green scallions, toss a few times on high to release aroma.
