Recipe

Ingredients

  • White rice
  • Karasumi(Mullet Roe)
  • Egg
  • Green scallions
  • Kaoliang liquor(or cooking sake)

Instructions

  1. [Authentic Recipe]
  2. Peel the thin membrane off premium Taiwanese Karasumi (Wuyuzi).
  3. Brush Kaoliang liquor (or rice wine) on the surface, and sear briefly in a pan (or with a torch) until bubbles form and it's fragrantly charred (leave the inside semi-raw and sticky).
  4. Dice the roasted Karasumi into 5mm cubes.
  5. Heat oil in a wok, stir-fry egg and rice to make crumbly golden fried rice.
  6. Season lightly with salt and a little white pepper (because Karasumi itself is very salty).
  7. Toss in the diced Karasumi and scallions, tossing briefly on high heat so the savory ocean aroma and rich depth of Karasumi coat the entire rice.

Trivia

[Hardcore] Karasumi is an absolute staple souvenir. Commonly sliced and eaten with daikon/scallions, but making it into fried rice activates the aroma with heat, dyeing every grain with premium flavor—the ultimate cheat code.

Eating tips & etiquette

[Unique Eating] Ensure a Karasumi cube is on the spoon when scooping rice, savoring the rich 'sea cheese' umami spreading in your mouth the moment you bite!
