  • Chinese noodles(You Mian)
  • Lean pork
  • Fish paste
  • Bamboo shoots
  • Bonito flakes
  • Black vinegar

Instructions

  1. [Authentic Recipe]
  2. [Rou Geng] Shred lean pork, season with soy, sugar, five-spice, and garlic. Add fish paste and plenty of 'sweet potato flour' (Digua Fen), knead until sticky, and boil in bite-sized pieces to make plump pork paste.
  3. [Soup] Add massive bonito flakes, rehydrated shredded shiitake, and shredded bamboo shoots to pork bone broth and heat.
  4. Season sweet and sour with soy sauce, rock sugar, and plenty of 'black vinegar' (Wu Cu).
  5. Thicken heavily with potato starch (or sweet potato flour) slurry.
  6. Put boiled yellow Chinese noodles (You Mian) in a bowl, top with the boiled Rou Geng, and pour the piping hot thick soup generously. Scatter cilantro and white pepper.
