- [Hakka Xiao Chao Ingredients] Rehydrate and shred dried shiitake, dried shrimp, and 'dried squid'. Shred pork (belly is best).
- Heat plenty of lard in a wok, thoroughly sauté the dried squid and shrimp until bubbling, extracting the savory seafood umami into the oil to the limit.
- Add pork, shiitake, shredded carrots, onions, and massive shallots (Hong Cong Tou) and sauté.
- Season with soy sauce, white pepper, a little sugar, and add a splash of broth.
- Toss in Bantiao, chives, and bean sprouts. Stir-fry on high until the noodles completely absorb the broth and fat umami and slightly char to finish.
