Recipe

Ingredients

  • Chinese noodles
  • White sesame paste(Zhimajiang)
  • Peanut butter
  • Garlic
  • Soy sauce
  • Black vinegar

Instructions

  1. [Authentic Recipe]
  2. At the bottom of a bowl, blend the crucial 'Majiang' (special sesame sauce). Mix plenty of white sesame paste (Zhimajiang) with a little peanut butter for extra richness.
  3. Add soy sauce, sesame oil, black vinegar, a little sugar, and grated garlic. Thin out with a little warm water (or broth) until smooth.
  4. Boil Chinese noodles (flat or medium-thick catch the sauce well). Right before done, drop greens (like bok choy) into the pot and remove together.
  5. Put the drained hot noodles and greens into the bowl with the sauce.
  6. Scatter chopped scallions on top. (Some shops add a little Lu Rou Fan minced pork).
  7. Right before eating, toss vigorously from bottom to top until the rich sesame sauce completely and thickly coats all the noodles.

Key spices

Intense savory white sesame and garlic

Substitutes at Japanese supermarkets

Japanese sesame paste, Udon

Pairing

Pork bone soup (like Gong Wan Tang) ordered as a set

Trivia

[For Everyone] Unlike cold 'Liangmian', this is eaten with hot noodles, so the sesame and garlic aroma rises intensely with the steam. Very rich and moisture-absorbing, so ordering a light soup alongside is Taiwanese common sense.

Eating tips & etiquette

[Unique Eating] Since noodles absorb the sauce and clump up over time, mix it at 'per-second speed' upon serving, drip a little homemade chili oil, and slurp instantly!

Allergen

Wheat, Sesame, Peanuts, Soy
