- Coat with sweet potato flour and deep-fry at 180°C until the surface is extremely crispy and golden.
- [Steaming] In a single-serving small clay pot (or ramekin), place chunks of daikon (or winter melon) and top with the fried ribs.
- Pour in lightly seasoned broth (soy sauce and white pepper) to cover. Steam for 1-
- hours until the meat falls off the bone and the batter turns into a gooey jelly.
- Plate boiled Chinese noodles (You Mian), dump the steamed ribs and all the rich broth over them, and scatter cilantro.
