- [Broth] Place massive pork bones and lean pork blocks (for later topping) in a large pot. Simmer on low without boiling for hours, carefully skimming scum, to extract a perfectly clear golden pork broth (Qingtang).
- Remove the pork blocks and slice them thinly.
- Place yellow Chinese noodles (You Mian), bean sprouts, and chives in a deep cylindrical bamboo sieve, the origin of the name 'Qiezai'.
- Vigorously shake the sieve up and down in boiling water (the shaking/draining action = Qie) to boil the noodles briefly, then invert the sieve to plate the noodles in a mound shape.
- Pour the clear pork broth, top with sliced boiled pork, fried shallots (You Cong Su), and a little minced celery.
