  • White Chinese noodles
  • Pork bone broth
  • Lard(or Scallion oil)
  • Green scallions
  • Soy sauce

Instructions

  2. Slowly boil pork bones, chicken bones, and onions in a large pot, removing all scum to make a perfectly clear 'Qingtang'.
  3. At the bottom of a bowl, put soy sauce, salt, a little white pepper, and
  4. tsp of the decisive flavor: 'premium lard (Zhu You)' or 'scallion oil'.
  5. Boil standard Taiwanese white straight noodles (Yangchun wheat noodles) in plenty of boiling water until soft with no hard core. Briefly blanch greens like bok choy with them.
  6. Pour piping hot clear broth into the bowl, dissolving the lard and soy sauce at the bottom.
  7. Add drained noodles and greens, scatter chopped green scallions (or shallots). Do not add any meat toppings.
