  3. Drop round spoonfuls of the shrimp paste into boiling water and boil until they float and become plump.
  4. [Soup] Boil pork bone broth with massive bonito flakes, shredded rehydrated shiitake, and bamboo shoots.
  5. Season sweet and sour with soy sauce, rock sugar, and plenty of 'black vinegar' (Wu Cu), and thicken heavily with potato starch.
  6. Plate boiled Chinese noodles (You Mian) or rice noodles, top with shrimp paste, and pour the thick soup.
  7. Finish with cilantro and white pepper.
