Instructions

- Roughly chop Taiwanese cabbage (Gaolicai: thinner leaves and sweeter than Japanese). Rehydrate and chop dried shrimp and shiitake; shred pork belly.
- Heat oil and sesame oil in a pan, sauté pork, dried shrimp, shiitake, and shallots until fragrant.
- Add cabbage and sauté briefly, add soy sauce, white pepper, a little salt, and the 'shiitake/shrimp soaking liquid', bringing to a light simmer (filling is ready).
- [Cooking Method] Put washed raw rice in a rice cooker, place all the sautéed filling and liquid on top, adjust water level, and cook.
- When done, fluff gently from the bottom so the cabbage doesn't fall apart too much. (*Eateries often use a 'mixing method' where the sautéed filling is mixed into pre-cooked rice).
